Preheat oven to 350 °F. Cook noodles as directed on the package and drain. Combine egg yolks, oil, sugar and salt and beat very well. Fold into noodles. Add in fruits, nuts and spices, and mix well. Beat egg whites until stiff but not dry, and fold in gently. Pour into a well greased 13X9X2 glass pan and bake for 45 minutes or until top is browned.
NB: Schmaltz and coconut oils have distinctive flavors they add subtly to the recipe. If you want something truly neutral, try vegetable shortening. But I'm of the opinion that the recipe benefits from the subtle flavoring of either schmaltz or coconut.
