ProudMommy's Tomato Salad

Source : Not Potatoes Again

2 1/2 Tbsp. olive oil
1 Tbsp. lemon juice
1/2 teaspoon salt
black pepper, to taste
2 cloves garlic, minced.
6 tomatoes
1 red onion, thinly sliced (optional)

Mix together the lemon juice, olive oil, salt, black pepper, and minced garlic. Set aside.

Thinly slice the tomatoes over a large bowl so the juices will fall into the bowl. Add the sliced onion and mix gently. Pour the dressing over the tomatoes and onions and let marinate at least 1/2 hour.
