Yakityak's Salmon Croquettes
Mix all ingredients in a large bowl. Let set about 10 - 15 minutes to soften the cereal. Put a very small amount of olive oil in a saute pan and set to medium heat. Form patties and saute about 3 - 4 minutes on a side or until nicely browned. Flip. Makes 5 or 6 croquettes.
- 1 14.75 oz can of salmon, drained
- 2 eggs, beaten
- 1/2 cup crushed Product 19 cereal
- 1/2 teaspoon salt
- 1/8 teaspoon paprika
- 2 tablespoons 2% milk
- 1/2 cup chopped onion
- 2 tablespoons chopped thyme
- extra virgin olive oil
Can be served garnished with tartar sauce or on a bun with sour cream as a condiment.
