ProudMommy's Roasted Vegetable Salad

Source: Not Potatoes Again!
6 red potatoes, diced
1 red pepper, cut into bite sized chunks
1 green pepper, cut into bite sized chunks
3 cups mushrooms, cleaned and halved if large
10 garlic cloves, chopped
1/4 c olive oil
basil to taste (the original uses rosemary -if you prefer that)
salt and pepper

Boil the diced potatoes about 5 minutes. Drain them and toss together with the peppers, mushrooms, garlic, oil and basil. Spread it into a roasting pan, sprinkle with salt and pepper to taste, and broil for 10-12 minutes, until slightly browned around the edges. Stir it once or twice to get it more evenly browned.
