Anieema's Pesach "Biscotti"

3 eggs
1 cup sugar
1 cup oil
1/2 tsp salt
1 tsp almond flavoring
1 1/2 cup passover cake meal
1 cup almonds
sugar and cinnamon
1 tbs. cocoa unsweetened (optional)

Mix eggs and sugar til light and fluffy. Add oil, salt, and flavoring beat til blended. Add cake meal mix well. Stir in chopped almonds. Let rest for 45 min.

Divide the dough into 2 lightly greased loaf pans, or with wet hands, shape each half of the dough into pan. Sprinkle with sugar and cinnamon.

Bake 350 for 30-45min.

Cut diagonal, and place back in oven 10-20 min, until lightly browned.
