In a large saute pan, saute chopped onion, riced cauliflower and 1/4 tsp of the smoked paprika with ample extra virgin olive oil. Stir frequently. 15 - 20 min.
While the onions and cauliflower are cooking, put diced potatoes in a glass bowl with the water, covered and microwave on high for 4 minutes. Pour off any remaining water and put the cooked potatoes in the crockpot.
Put broth, tomatoes, garbanzo beans, salt and the other 1/4 tsp of smoked paprika into the crockpot. When the cauliflower and onions are done, add them to the crockpot.
Using the same saute pan, season the chicken cubes with the BBQ rub and brown in more olive oil. Once the chicken is browned put this in the crockpot, too.
Stir well and cook on low for at least 4 hours.
Serve in bowls with steamed rice or thin noodles.
