Ingredients

  • 1 lb of dried green split peas, rinsed and drained
  • 2 boxes (1 quart each) of pareve 'No Chicken' broth (obvs if you have actual bone broth on hand, use that)
  • 1 large or 2 small yellow onions, diced
  • 1 large or 2 small Idaho potatoes, peeled and diced fine
  • 3 medium sized carrots, diced fine
  • 2 stalks celery, diced fine
  • 2 cloves garlic, minced
  • 1.5 tsp of some combination of fresh thyme, marjoram and/or rosemary
  • 2 bay leaves
  • 1 entire package of Empire turkey bacon, diced
  • 2 - 3 'glugs' of extra virgin olive oil
  • 2 tsp kosher salt
  • 1/4 - 1/2 tsp of fresh ground pepper

Method

If using an instapot and you are so inclined, brown the diced turkey bacon in the olive oil until lightly browned on sauté. Add the onions and sauté until lightly browned… 10 -15 minutes. Then place all the ingredients in the pot and cook on slow-cooker for 8-10 hours.

If using a crockpot you can simply place all the ingredients in the pot and cook on slow-cooker for 8-10 hours, or if you choose you can do as above in a separate pan.

Check at the halfway point for water content, and add if necessary.

The cooking process can be greatly sped up by pressure cooking if using an instapot.

Check for salt and pepper seasoning before serving. It probably needs more salt.
