Thoroughly grease a casserole dish with schmaltz.
Layer the grated yams evenly along the bottom of the dish. Drizzle honey over the yams, then sprinkle generously with cinnamon. Sprinkle lightly with nutmeg and pepper. Daub with schmaltz.
Layer with apples and repeat the seasoning process.
Layer with grated carrots and repeat the seasoning process.
Gently pour 1/3 of a cup of the chicken stock in at both ends of the casserole dish, being careful to leave the layers undisturbed.
Bake covered at 350 F for 2 hours.
