1 onion, chopped
1 small green pepper, chopped
1 big firm fresh tomato, chopped
5 mushrooms, chopped
8 oz can plain tomato sauce
1/3-1/2 zucchinni, peeled and chopped
4-6 cups water
3/4 cup dry beans (2 or more kinds),soaked OR 1/2 cup rice
1/4 teaspoon garlic powder
1 tablespoon hot pepper sauce (or some cayenne pepper powder)
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon parsley flakes
1. Chop onion and green pepper. Saute in vegetable oil a bit.
2. Add chopped tomato and mushrooms. Add garlic powder, salt, pepper, hot pepper sauce or cayenne powder, and parsley flakes. Mix well and saute until it lets out some juice.
3. Add a can of tomato sauce, water (4-6 times as much as tomato sauce,
depending on how thick you want the soup), zucchini, beans (or rice). Bring
to boil. Reduce heat and simmer until beans (or rice) are done.
