Chunk the potatoes into 1 inch cubes. Microwave on high with a little water in a covered glass bowl. Stir. Microwave for another 5 minutes. Set aside.
After toasting the bread, cut in a grid into 1/2 inch squares.
Mix everything in a (very) large bowl. Make sure the egg is mixed in thoroughly.
Stuff as much as you can into the turkey. Put the remainder into a casserole dish and moisten with some chicken broth if you have it (water if you don't). Bake at 325 for 35 - 40 minutes.
This is a pretty simple, basic stuffing recipe. It's tasty, but nothing really unusual. I think it's a good recipe to start with and if you're into more wild stuff you can use this as a base.
