Ingredients:
1 lb package manishevitz medium noodles, cooked
1 large onion
1/3 head broccoli, separated into smallest florets possible
3/4 bar margarine
1 box (1 lb?) ricotta cheeze
10 oz package frozen chopped spinach, prepared according to package
directions
1/2 package (= 8 oz) mozzarella cheese, grated
1-2 6 oz cans salmon
Directions:
Fry onion in olive oil. Add broccoli and margarine in the end, stir together.
Take off the heat when margarine is melted and broccoli turns bright green.
Mix onion-broccoli-margarine mixture with cooked noodles and 2 beaten eggs.
Spread 1/2 of the noodle mixture on the bottom of a rectangular 8X12 baking pan. Mix ricotta with cooked spinach. Spread 1/2 of ricotta-spinach mixture on top of the noodles. Cover with salmon, sprinkle grated cheeze on it. Cover with second 1/2 of the ricotta-spinach mix, and then the rest of the noodles. Sprinkle the top with leftover mozarella cheeze.
Bake at 375 F for about 45 min (first covered; uncover at the end)
