Anieema's Pesach Potato Stuffing for Poultry

1 large onion chopped
6 tbs. melted margarine (Divided)
5 Large potatoes, peeled and coarsely shredded
3-4 tbs. minced fresh parsley or minced celery tops
1 tsp salt
1/2 tsp paprika

In a small skillet over med. heat, saute the chopped onion in 2 tbs. of melted margarine or oil til golden brown.

Combine the onions with the potatoes, minced parsley or celery tops, and the seasonings in a large mixing bowl. Pour the remainder of the oil or margarine over the potato mix, mix well.

Spoon into bird.
