ProudMommy's Carrot and Parsley Salad

Source: Not Potatoes Again! (what can I say, I put all my favorites into the cookbook :-) 3 1/2 cups grated carrots
1 bunch parsley, chopped
1 clove garlic, minced
3 Tbsp. lemon juice
1/4 cup olive oil
salt
pepper

Combine the carrots, parsley, garlic, lemon juice, and olive oil. Add salt and pepper to taste.
