Anieema's Basque Vegetarian Paella

2 large onions, chopped (about 2 cups)
5 cloves garlic, finely chopped
1 cup uncooked long grain rice
1 can (14 oz) quartered artichoke hearts, drained
1 pkg (16 oz) cauliflower, carrots, and snow pea pods, thawed
1 cup frozen sliced bell peppers
2 cups dry white wine or chicken broth (to make it fleishig)
1 tsp garlic salt

Spray 10" skillet with nonstick cooking spray; heat over med high heat. Cook onions and garlic in skillet about 8 minutes, stirring occassionally, until onions are tender.

Stir in rice and artichoke hearts. Cook about 3 minutes, stirring occassionally. Stir in wine and salt. Heat to boiling; reduce heat to low. Cover and simmer about 10 minutes. Stir in vegetables. Cover and cook 5 minutes or until liquid is absorbed.
